Parsnip and Carrot “Fries”

Description

A delicious and healthy side dish or appetizer that is sure to be a crowd pleaser.


Ingredients

For the “fries” 

  • 1/2 lb carrots, peeled and sliced into “fries” 
  • 1/2 lb parsnips, peeled and sliced into “fries” 
  • 1 teaspoon dried thyme
  • 1/4 cup parmesan cheese 
  • 1/2 teaspoon each salt and pepper 
  • 1/4 cup olive oil 
  • 1 tablespoon cornstarch 

Ginger Spiced Hummus  

  • 15 ounce can chickpeas, drained and rinsed
  • juice from 1/2 lemon 
  • 1 tablespoon tahini 
  • 1 tablespoon olive oil 
  • 2 tablespoons water 
  • 1 clove garlic, crushed 
  • 1 teaspoon fresh ginger, grated 
  • 1/4 teaspoon cardamom 

Instructions

  1. Preheat oven to 375F. 
  2. Peel and slice the carrots and parsnips into a french fry shape and arrange on a sheet tray in 1 flat layer. 
  3. Combine thyme, cheese, salt, pepper, and olive oil in a small bowl and brush evenly to coat all sides of the “fries.” 
  4. Place the tablespoon of cornstarch in a small sieve and tap to evenly disperse the cornstarch over the “fries.”
  5. Bake in preheated oven for 30-35 minutes, or until browned and crispy. 

Ginger Spiced Hummus

  1. Drain the rinse the chickpeas and place into a food processor fitted with a blade or place into a blender. 
  2. Crush the garlic and grate the ginger. Place into the food processor. 
  3. Take all remaining ingredients and place into food processor. Blend on high for 1-2 minutes or until smooth and creamy. 

Notes

* Can use a crinkle cutter to achieve the look of a crinkle-cut fry. 

* The “fries” are best served warm with room temperature hummus.
