Black Bean, Peach, and Tomato Salsa

Final summer barbecue? Backyard picnic? Unexpected company? You can whip up this colorful, flavorful salsa in just 5 minutes. It’s great with tortilla chips but it also makes a lovely addition as a topping to scrambled eggs. The peaches add a sweetness without overpowering this mild salsa. Make sure to use fresh cilantro for a bold fresh herb flavor, although, dried cilantro will work also. Anytime you can buy produce from a farmers market or fresh produce store, you’ll notice much bolder flavors. If you have one near you, try purchasing peaches and tomatoes (when in season) to make this dish. Enjoy this simple to put together yet packed with flavor salsa!

  • 2 peaches
  • 1 pint cherry tomatoes
  • 1 tbsp. chopped red onion
  • 1 tbsp. freshly chopped cilantro
  • 1 (8oz.) can black beans, drained and rinsed
  • salt and pepper to taste

Method of Preparation:

  1. Dice the peaches, tomatoes, red onion, and cilantro.
  2. Drain and rinse the black beans and add all ingredients to the bowl.
  3. Add salt and pepper to taste.
  4. Serve immediately or refrigerate. Will keep for 1 day in the fridge, so can prepare it the night before.
