- 2 peaches

- 1 tbsp. chopped red onion

- 1 (8oz.) can black beans, drained and rinsed
- salt and pepper to taste
Method of Preparation:
- Dice the peaches, tomatoes, red onion, and cilantro.
- Drain and rinse the black beans and add all ingredients to the bowl.
- Add salt and pepper to taste.
- Serve immediately or refrigerate. Will keep for 1 day in the fridge, so can prepare it the night before.
