Homemade pizza…party

I absolutely love inventing incredibly random and unique combinations of pizza toppings! This recipe is great fun for a party for kids or adults, where everyone could create their own individual pizza if you display lots of pre-prepared toppings. You could get as creative and inventive as you want (see below for grape/goat cheese/rosemary pizza) or play it a bit safer with (see below for tomato sauce/mozzarella/basil pizza). There are endless possibilities with pizza toppings. Go crazy- you never know what new flavor combination you’ll discover!

PIZZA PARTY: If using this recipe for a party, purchase 1 pizza dough for every 4 people. Let come to room temperature and use a scale to equally divide the dough into 4 pieces. You’ll want to make sure you have enough rolling pins for at least every 2 people. Ensure ALL your toppings have been chopped, diced, or sliced and put into bowls ahead of time. This will save you and your guests time when you’re ready to assemble your pizzas. If possible, arrange the toppings on a large table or counter space and group together similar items. (Sauces, vegetables, fruits, fresh herbs, cheeses, meats, etc.) Now the fun part! Everyone gets to add toppings of their choice, bake, and EAT!

***Make sure to place the dough on the reverse side of an oiled baking sheet before adding toppings. Pizza stones work well also.

Baking Option 1: Bake in oven at 450F for approximately 13-15 minutes

Baking Option 2: Bake on the grill at 450F for approximately 5-7 minutes.

PIZZA DINNER FOR 4-6: If you’re using this recipe for dinner for 4-6 people, purchase 2 pre-made pizza doughs in the refrigerated section of your local grocery store. Divide each dough in half, leaving you with 4 equal pieces. Roll each of the 4 pieces of dough to about 1/4″ thick (or thinner if you can) and place on the reverse side of an oiled baking sheet.

Goat Cheese and Grape Pizza

  • 4 tbsp. Roasted Garlic Onion Jam (Stonewall Kitchen*) IMG_0961
  • About 20 grapes (sliced in half)
  • 2 oz. goat cheese (crumbled)
  • 1 tbsp. fresh rosemary (diced finely)

Spread a thin layer of the roasted garlic onion jam on 1 of the 4 pieces of rolled out dough. Top with the sliced grapes and the crumbled goat cheese and sprinkle with the finely diced rosemary. Grill at 450F for 5-7 minutes OR bake in the oven at 450F for 13-15 minutes.

Sautéed Vegetable and Hummus Pizza

  • 4 tbsp. of roasted garlic hummus (substitute your favorite flavor hummuIMG_0963s)
  • 1/4 cup of red onion (diced)
  • 1 small yellow squash (chopped)
  • 4-5 white mushrooms (quartered)
  • 1 tbsp. olive oil

Sauté the red onion, yellow squash and mushrooms together in the frying pan with 1 tablespoon olive oil for about 5-7 minutes or until the vegetables have softened. Set aside. Spread a thin layer of the hummus on the rolled out dough. Top with the sautéed vegetables. Grill at 450F for 5-7 minutes OR bake in the oven at 450F for 13-15 minutes.

BBQ Pulled Pork and Corn Relish Pizza

  • 4 tbsp. barbecue sauce IMG_0960
  • 1/4 cup of cooked BBQ pulled pork (may substitute chicken or omit the meat)
  • 4 tbsp. Corn and Chile Tomato-Less Salsa (Trader Joe’s*)
  • 3 tbsp. shredded cheddar cheese

Spread a thin layer of barbecue sauce on the rolled out dough. Top with the cooked BBQ pulled pork, corn and chile salsa and cheddar cheese. Grill at 450F for 5-7 minutes OR bake in the oven at 450F for 13-15 minutes.

Fresh mozzarella and Basil Pizza

  • 4 tbsp. tomato sauceIMG_0959
  • 5-6 slices of fresh mozzarella
  • 2 tsp. dried oregano
  • 4 leaves fresh basil

Spread a thin layer of tomato sauce on the rolled out dough. Top with the slices of fresh mozzarella cheese and dried oregano. Grill at 450F for 5-7 minutes OR bake in the oven at 450F for 13-15 minutes. Chop the fresh basil and sprinkle on top of cooked pizza.
