Semi Frozen Fruit and Yogurt Parfait

For this delicious summer treat, you’ll combine frozen pureed fruit and creamy greek yogurt together to make this semi-frozen parfait. Layer the frozen fruit puree in between the yogurt to create a beautiful multi-layered creation and top with granola and a drizzle of honey. This recipe is perfect for both breakfast and a sweet treat for a light afternoon or evening snack. The most wonderful part about this recipe is that you can use any combination of fruit you’d like. My favorite combination is strawberry and pineapple. The sweetness of the strawberries combined with the slightly tart pineapple lend to the perfect flavor combination.

Semi-Frozen Fruit and Yogurt Parfait (serves 1)

  • 1/2 cup of frozen strawberries
  • 1/2 cup of frozen pineapple
  • 3 tbsp. milk
  • 1 tbsp. honey
  • 1/3 cup of greek yogurt
  • 2 tbsp. granola

Method of Preparation 

You’ll first want to combine the frozen fruit, milk and honey in a blender. You might need to open then blender and stir a few times before the mixture becomes fully blended. You can add another tablespoon of milk to the fruit mixture to make it easier to blend. Once you have a smooth puree of fruit, you can beginning layering up your parfait. Of course it looks stunning in a clear glass bowl, but you can use any bowl you have handy. It doesn’t need to look fancy to taste delicious! Start by spooning half of the pureed fruit mixture on the bottom of the glass. Layer your yogurt on top and finish with the rest of the fruit mixture. Top with granola and a drizzle of honey and enjoy! For crunchy granola, eat right away, but for a softer texture, wait about 5 minutes before consuming.
