Strawberry Smoothie

Great for a quick breakfast on the go or a refreshing mid-morning snack! This strawberry smoothie is packed full of fresh strawberries and thick Greek yogurt. You can also taste a tiny hint of peanut butter too!

You can always buy fruit already frozen or you can buy fresh fruit and package it for the freezer. For ripe bananas, just peel, wrap in plastic wrap, and place in a freezer bag marked with the date. Frozen bananas will keep for 3-6 months but you’ll probably use them up before that! For the strawberries, remove the stem and place whole OR sliced into a freezer bag marked with the date. These will also keep about as long as the frozen bananas.

With the frozen fruit ready to be used, you can easily make this in the morning. Put it in your favorite travel cup (that will keep liquids chilled) and it will usually stay cold for 2-3 hours. Enjoy!

Ingredients

  • 1 frozen banana
  • 5-6 frozen (previously fresh) whole strawberries
  • 1/2 c. Greek yogurt (I use 2% Fage)
  • 2 tsp. peanut butter
  • 1/3 c. milk (just shy of a 1/3 c.)
  • 2 tsp. honey (add more for a sweeter flavor)

Method of Preparation 

Place all ingredients into the blender and blend on high until the mixture is smooth and creamy. For a thicker smoothie, put in slightly less milk than the 1/3 cup called for in the recipe. For a thinner drink, add a bit more than 1/3 cup of milk. Of course you can always substitute out the milk for soy, almond, rice, or any other milk of your choice.
