Boursin Cheese Stuffed Green Olives

Happy New Year everyone! Still looking for a quick New Year’s Eve appetizer for tonight? These stuffed olive skewers take about 10 minutes to prepare from start to finish. I used marinated green olives. You can either purchase a few separately at the olive bar at your local grocery store or if you’re in need of a lot, look for them in the jar or can in the canned goods aisle of the store. As for the cheese, there are different types of Boursin. I used the Shallot and Chives flavored one. It comes in a 5.2 oz package and you can also find this at your local grocery store. For a pop of color and to cut the saltiness of the olives, I added grape tomatoes. Enjoy!

Ingredients

  • 1 (5.2 oz) package Boursin cheese, Shallot and Chive flavored (*substitute other flavors, if  desired)
  • 1 (12 oz -14 oz) jar of marinated green olives (*substitute plain, if desired)
  • 1 pint grape tomatoes
  • 1 package 4 inch skewers

Method of Preparation 

Take the olives one by one and fully stuff to the rim with the cheese. Skewer one olive followed by one grape tomato and top off with one more olive. The grape tomato will be sandwiched in between the two green stuffed olives. Layer onto a platter and serve. Makes about 10-12 skewers.
