Smoked Salmon Toasts

Incredibly simple to make, this 5 ingredient dish makes the perfect appetizer for your next gathering! It’s elegant in its presentation, yet composed of basic ingredients. The spread is a mix of sour cream, small curd cottage cheese, roasted garlic and horseradish. It’s topped with a small piece of smoked salmon, also known as lox. You’ll want to look for Nova lox which is a less salty type of lox. You’ll also want to buy the best baguette you can find; crunchy on the outside and chewy on the inside. The longest part is roasting the garlic which takes about 15 minutes. You’ll want to roast it because it will lend sweetness to the spread rather than the spiciness of raw garlic. While it’s roasting, you can work on assembling the other spread ingredients and also toasting your baguette slices. The trick is to lightly toast it so that it maintains some of it’s chewiness and it’s easier to bite into. These are sure to become your next go to app!  Enjoy!

Ingredients

  • 1 clove roasted garlic, coated in olive oil
  • 1 baguette sliced into 1 inch pieces, each brushed with olive oil
  • 1/4 cup cottage cheese (small curd)
  • 1/4 cup sour cream
  • 1/2 tsp. horseradish
  • 1/8 tsp. lemon juice
  • 1 (4 oz.) package of lox, available in the refrigerated section of your local grocery store

Method of Preparation 

Begin by peeling the garlic clove and coat in a small amount of olive oil. Wrap in tin foil and place into an oven at 350 F for about 10-15 minutes. Meanwhile, slice the baguette into 1 inch pieces and brush each piece with a small amount (1/2 tsp.) of olive oil. Place onto a baking tray and lightly toast at 250 F for about 8-10 minutes. Remove and let cool. Mix together the remaining ingredients: cottage cheese, sour cream, horseradish and lemon juice. Add in the roasted garlic and stir to evenly distribute all ingredients. Spread a heaping teaspoonful onto each slice of the toasted baguette and top with a small slice of lox. Garnish with a piece of dill. The garnish is optional but it does add delicious flavor.
