Mini Cheesecake Bites

Looking for an easy and seemingly fancy dessert to serve at your next party? These cute mini cheesecake bites will work perfectly! Not too much prep time and only 18 minutes of baking time. The best part is that they can be made ahead and frozen until you are ready to serve them. They should keep for about 2-3 weeks in the freezer. They are also perfect for an appetizer only party or to serve as dessert for a birthday party. You can dress them up with fresh strawberries or raspberries, fresh whipped cream, and a drizzle of chocolate sauce or you can lightly dust them with a little powdered sugar and cocoa powder. Either way, they are a great little pop in your mouth dessert.

Mini Cheesecake Bites

Description

These cute mini cheesecake bites are perfect to serve as appetizer sized dessert.  


Ingredients

Scale
  • 8 ounces cream cheese, softened 
  • 1 egg
  • 1/3 cup sugar
  • 1/2 tsp salt 
  • 4 ounces mini chocolate chips 
  • 1 1/4 cup graham cracker crumbs 
  • 2 tablespoons sugar 
  • 5 tablespoons butter, melted 

Instructions

  1. Take the softened cream cheese, egg, sugar, and salt and beat until well combined and smooth.
  2. Fold in the chocolate chips. Set aside. 
  3. In a separate bowl, combine together graham cracker crumbs, sugar, and melted butter. Reserve 1/4 cup of the mixture. 
  4. In a mini cupcake tin, scoop out about 1-2 teaspoons of the graham cracker mixture and press firmly into the mold with a small spoon. 
  5. Spoon about 1-2 teaspoons of the cream cheese mixture on top being careful not to overfill. 
  6. Sprinkle on the remaining 1/4 cup of graham cracker mixture on top of each mini cheesecake bite.
  7. Bake at 325F for 16-18 minutes or until a knife inserted into one comes out clean.

Notes

Mini-chocolate chips work best. If you have regular sized chocolate chips, you can roughly chop them with a sharp knife and use them as a substitute for the mini-chocolate chips. 

If you do not have graham cracker crumbs, you can take whole graham crackers and crush them by hand or in a food processor until finely ground.
